Cargo that is considered fresh will have some limited time for extraction of value before it becomes waste. Perishable items must traverse multiple stakeholders who should provide the conditions for proper handling of the goods that are being transported from value added producer to value added producer until reaching the desired consumer in consumable condition. Product (quality) assessment may be done by an observer or a testing or measurement method to determine ripeness or saleability.
