This chapter discusses the resources needed for successful setup of a Sensory Quality program, which include assessors, testing location, equipment, and supplies/reagents. It covers the following items: (1) Sensory personnel requirements and assessor considerations (including the advantages and limitations between using internal and external employees); (2) physical location recommendations (such as low odor and quiet areas); and (3) considerations for Sensory personnel requirements. In addition, assessor training ideas and screening and development of the assessor pool are covered. These critical factors are essential for the development of a robust Sensory Quality testing program.
