Chapter 7 | The Basis of Sensory Data for QC: Sensory Specifications

Sensory specifications are imperative for understanding the QC sensory performance of products. Specifications are developed on the basis of an understanding of product variation, the effect of ingredient variation on the final product, and the attributes of the product that drive acceptance. Regardless of the method used to perform QC sensory analysis, specifications capture the key and off attributes that drive sample quality and acceptance. When sensory specifications are set, quantitative data can be collected that allow for statistical analysis and trending data over time. With set specifications and procedures, decisions regarding product disposition for out-of-specification results are easier and less contentious.
