Extensive and expensive market research and consumer testing are often conducted before introducing a new product to the market. Predictions of market share are based on the acceptability of the product that was tested. For these reasons, the key attributes of a consumer product must be maintained. As a result of this process, finished product specifications may include sensory attributes in addition to chemical and physical measurements. This manual is intended to help in planning and implementing a plant sensory analysis program to provide data appropriate for QA/QC applications. It is not intended to be a sensory methods or statistics manual. Rather, it is a guide to adapting sensory methods to everyday quality control situations. Procedures appropriate for a large manufacturing facility producing the same product for weeks or months on end will be different from procedures used by small plants making short runs of multiple products.
