Abstract

This specification covers the material, design, and performance requirements associated with the construction of non-tilting (Type I) and tilting (Type II) jacketed kettles that use steam as a heat source for cooking food in commercial and institutional food service establishments. The kettles shall be available in four styles as follows: Style 1floor mounted, pedestal; Style 2floor mounted, with legs; Style 3wall mounted; and Style 4cabinetized. The kettles shall be classified into the following classes: Class Adirectly connected to an external heat source; Class Bself-contained, gas-fired steam generator; and Class Cself-contained, electric steam generator. They shall also be grouped into three Grades according to maximum working pressure rating, and ten sizes according to capacity. The products shall be evaluated for their conformance with capacity, heating time, and energy utilization requirements.

Scope

1.1 This specification covers jacketed kettles that use steam as a heat source for cooking food in commercial and institutional food service establishments. This specification does not cover equipment used by food processors who normally package the food that they cook.
