The updated efficiency calcification in section 11 includes the energy absorbed by the test pans, but does not define how it should be determined. The missing equation is critical to accurately determining the cooking-energy efficiency and creating a standard basis of comparison between commercial convection ovens. The intent of this revision is to clarify the original intent of the updated standard and maintain consistency with the approach used in the Combination oven test method (F2861-10).
